At up to £1,500 per kilo, you'd hope they taste like a personal gift from heaven.

I don't think anybody is going to be disappointed. They're a complement to a recipe, rather than some stunning side dish. More often than not they are served with eggs in one form or another, very often with foie gras, in salads, and as part of the classic périgourdine or Périgueux sauce.

Perhaps the most memorable aspect of the Melanosporum is its exquisite smell. It tastes well enough, but when you open the door of the truffle market in Sarlatla-Caneda prepare yourself for a truly aromatic sensation.
